Q Is every mentaiko product spicy? +

Karashi mentaiko normally uses chilli, with heat varying by product. Uncoloured does not mean non-spicy. Ask specifically if you need to avoid chilli.

Q Can I eat workshop-made mentaiko immediately? +

Follow the venue’s maturation instructions. Hakuhaku specifies two days refrigerated; do not apply that timing to other venues. Check storage and transport too.

Q Can children join a workshop? +

Conditions vary. Hakuhaku includes preschool-age children and requires a guardian for preschool and primary-school participants. It involves chilli, and the finished roe cannot be completely chilli-free.

1What is mentaiko?

A meal with whole and sliced mentaiko, white rice and mentaiko bread.

This guide uses mentaiko to mean karashi mentaiko: pollock roe seasoned with a chilli-based marinade. Its tiny grains bring a salty, savoury, sometimes quite spicy flavour. It is a Fukuoka and Hakata speciality; the name does not mean the fish was caught locally.

Names can vary by region. If avoiding chilli, ask whether it is included instead of relying only on the word mentaiko or tarako.

2Choose the spice and portion

For a set meal, check what comes with the rice; for a side dish, check the portion. A product called mild can still contain chilli. When buying a gift, explain whether it will be eaten soon or carried onwards so staff can advise on quantity and cooling.

For children or anyone sensitive to spice, ask about a small portion. Uncoloured describes colouring; it does not mean non-spicy or suitable for an allergy.

3Taste it gradually with rice

Mentaiko has a concentrated flavour, so a little on rice is an easy starting point. You can eat the thin membrane or loosen the roe, depending on the dish and your preference. There is no need to take a large piece in one bite.

A seared roe dish or mentaiko bread is not automatically cooked through. If full cooking matters for you, confirm the preparation rather than relying on the dish name.

4Make your own mentaiko

In Fukuoka, workshops let you season and marinate your own roe. Haneya’s Karashi Mentaiko Dojo and Fukuya Hakuhaku’s my Mentaiko workshop introduce the preparation behind the food. Unlike some cooking classes, your creation may need refrigerated maturation before it is ready to eat.

Hakuhaku currently instructs participants to mature their roe in a refrigerator for two days. Check your venue’s instructions and whether your accommodation or a chilled delivery option fits the plan.

5Check cooling and ingredients

Follow the storage temperature and use-by instructions for your particular product. An ice pack alone does not guarantee safe transport for any length of time. Check the roe, marinade and toppings for ingredients you must avoid, which may include wheat, soy or sesame.

Workshop products and shop purchases may have different conditions. For an allergy, discuss shared preparation and equipment too; choose another activity or meal if the necessary accommodation cannot be confirmed.

6How products and venues differ

Whole roe, sliced mentaiko and mentaiko bread on a dining table.

Whole roe keeps its sac shape, kireko includes broken pieces, and barako is loose roe. Choose for gifting, everyday rice or cooking. Marinades, citrus notes and heat differ, so one product does not represent every style of mentaiko.

Factory viewing, model-food crafts and making edible roe are different activities. Hakuhaku’s food-model activity was suspended when checked; confirm the actual programme rather than relying on its name.
